Spinach and Lentil Curry Soup

The nuttiness from the green gram lentils contrasts perfectly with the earthiness of the spinach, both stewed in a creamy coconuty base, helps tie this spinach and lentil curry soup perfectly into a neat bow of comforting goodness. You will definitely be getting your 5 a-day from the curry soup!

Spinach and Lentil Curry Soup

This spinach and lentil curry soup is a beautifully healthy soup, coconuty with a hint of cumin spice, complementing the nutty green gram lentils.

Ingredient

  • 1 cup whole green gram 

  • 3 cups water

  • 1/2 tsp turmeric powder

  • 1 cup thick coconut milk  

  • 1/2 tsp cumin powder  

  • 1 green chilli, chopped finely 

  • 1 cup water, and as required

  • 300g spinach

  • to temper
  • 1 tbsp coconut oil

  • 1/2 tsp mustard seeds

  • 1 sprig curry leaves

Directions

  • Soak 1 cup of green gram lentils overnight. Rinse and drain when ready to cook.
  • Add to a pot the green gram lentils, 3 cups of water and 1/2 tsp turmeric powder. Simmer gently for around 40 minutes or until the lentils are soft. The lentils should still hold their shape.
  • Add the thick coconut milk, cumin powder, chopped green chillies, water, salt and bring everything to a boil. Cook for about 5 minutes. 
  • Heat 1 tbsp of coconut oil in a pan. Add mustard seeds and gently stir until the seeds begin to splutter. Then add the curry leaves and stir for a further 20-30 seconds. Pour this over the soup and mix well. 

Notes

The soup should have a medium thick consistency – however adjust the simmering time to achieve the consistency you prefer.

If it is still too thick, add enough water. Note that the soup will thicken as it rests so adjust accordingly.
